In new book, ice-cream entrepreneur shares story of Jeni's along with recipes
Jeni Britton Bauer is a superstar of the Columbus food scene.
Selling ice cream in wild flavors such as Goat Cheese With Roasted Red Cherries, she has gained a steady following at her eight (and counting) Jeni's Splendid Ice Creams shops in central Ohio along with a couple outside the area.
Her sweet treats have also garnered national attention and been made available at specialty stores from coast to coast as well as at www.jenisicecreams.com .
Her latest venture, though, isn't a new flavor combination or a new shop.
It involves everything that customers want to know about her ice creams in a book: Jeni's Splendid Ice Creams at Home ($23.95), reaching bookstores nationwide today.
The book contains the history of the business and profiles of some key suppliers, including Snowville Creamery and Wayward Seed Farm. And, perhaps surprisingly, it includes recipes for the signature flavors (such as Salty Caramel) and many seasonal flavors (Roasted Strawberry Buttermilk, among them).
Bauer doesn't worry that someone will use the recipes and create knockoff versions of her stores.
"The hardest thing about the business is not the recipes," she said. "It's running the business."
Nor does she worry that customers will make her ice cream at home instead of patronizing her shops.
"I think coming out to the ice-cream shop is a different event from making ice cream at home - which is a giving thing," she said. "A great chef might give out their recipe for lobster bisque. You might make it for special events but not as a rule."
About four years ago, in an article for Food & Wine magazine, Bauer deconstructed her ice cream for the home cook.
She needed about a month, she said, to produce ice cream as smooth and creamy as what she sells in her stores, without the iciness for which the homemade version is known.
"Other ice creams never come out the way they are at the store," she said.
She was determined, however, that hers would.
The story was seen as such a success that the folks at the magazine persuaded her to consider a book.
She hired an agent and spent six months on the proposal.
"I wrote the proposal the best I could possibly write - not thinking my publisher would like my voice and want me to write the book," she said.
Yet the publisher did.
Instead of hiring someone to do the writing - the common approach with books by chefs - Ann Bramson, publisher and editor-in-chief of Artisan Books in New York, wanted Bauer.

"We built a test kitchen in the back of our storage area," she said, noting that it has stainless-steel counters but the types of standard appliances and equipment that people have at home. She also used an inexpensive canister-style ice-cream machine

when the folks at mercer’s dairy sent me their six types of wine ice cream, i couldn’t wait to try ‘em. because they are wine-based, sampling them was done just like you’d do at a wine tasting – from lightest onwards – starting with the royal white riesling + finishing with the chocolate cabernet. after my first bite, i realized, whoa. these are going to be even better than i expected.
the riesling ice cream is so light + crisp, with just the right level of sweetness. the red raspberry chardonnay was a pleasant surprise. i’m not much of a chardonnay drinker because i find the oaky + buttery notes a bit much. however, the wine pairs wonderfully with the fruit, making for a creamy, rich ice cream. the peach white zinfandel was next – as i’ve never tried white zinfandel, i had no idea what to expect. it was lovely, with bright peach notes + a little zing from the wine. next up, cherry merlot . WHOA – absolutely amazing, with nice pieces of cherry + a creamy, decadent texture. onto the port ice cream , which was delicate, smooth + tasty. finally, the chocolate cabernet , which was heavenly – rich, complex + perfectly balanced. all in all, i was thrilled with the ice creams – they truly have achieved wonderful results with this brilliant pairing of wine + ice cream.
as if wine ice cream wasn’t enough, mercer’s is debuting a new line of sweets in july, the winewalkers™ – four different types of ice cream bars, sandwiches + cones. the one i’m the most excited about is, hands-down, the ice cream sandwich – chocolate cabernet ice cream with mini chocolate chips nestled between two chocolate wafers. uh, yes please!
