6 Alston students join healthy-food initiative

It always has been a struggle to get kids to choose healthier food options, but the key, says Jeff Allen, is to get them involved in the process.

Allen, a local food writer and former history teacher at Summerville High School, serves on the board of directors for Slow Food Charleston, an organization that promotes high-quality and sustainable food.

Slow Food Charleston, Leadership Dorchester, the Woodlands Inn and Trident Technical College have teamed up with Alston Middle School to create Culinary and Horticulture Education for Students, or CHEFS, a healthy-eating initiative that eventually would expand to other schools.

Six Alston students will serve as sous chefs and work with culinary professionals at Woodlands and Trident Tech's Culinary Institute.

The students will research some of their favorite recipes this summer with the goal of making those dishes healthier. They also are in charge of rallying their classmates and getting their feedback.

In addition, the students will manage gardens at the school and at Woodlands, which is nearby. Leadership Dorchester will mentor the students, and this summer, the cafeteria staff will receive training from the Culinary Institute.

Slow Food presented this idea to Dorchester District 2, and the project was chosen by the 2011 Leadership Dorchester class as its project for the year.

Alston was chosen to pilot the program because it had a "supportive administration, and there was a demographically high need. Almost half of the students there are on free and reduced (priced) lunch. It was also close to the Woodlands, and we knew we wanted to work with them," Allen said.

Shannon Hudak, the teacher liaison for the project, said she and many of her colleagues have seen firsthand during homebound visits the unhealthy foods some students are eating. That is something CHEFS wants to change.

"We just want people to think about what they put into their bodies. If you grow it yourself, you know that it's healthy. Nothing tastes better than that," said Hudak, who also has begun gardening.

The goal, Allen said, is not just getting students to change their eating habits, but educating them as well about the foods they are eating and incorporating this into their curriculum.
