Monday Morning Motivation: A Sweet Treat Packed with Power
With summer here, many of us want to look our best. This makes us a little more conscious of what we put on our plates - but passing up a sweet treat is not always the easiest.
Before you reach for a cookie or cake to get the pick-me-up you crave, Victoria Tesch from Wausau Health and Fitness has a healthier sweet option. She suggests to use your favorite sugar-free jello pudding and pump it up by adding 2 scoops of protein powder. (On Sunrise 7 she featured sugar-free jello cheesecake pudding and vanilla protein powder). Tesch says to follow the instructions on the box, but to add a bit more milk since we are adding the protein.
To dress up your tasty treat, she suggests you add mixed nuts or your favorite summer berries - like strawberries, blueberries, and bananas.
Tesch says this is a great, simple recipe that will give you that sweet fix, it wont take a lot of time to prepare, and it's easy enough that the kids can help.

I made some vanilla cupcakes the other day that I wanted to make into rainbow cupcakes, but the batter was too thick, then the cupcakes turned out a little dry. So I was stuck with these really yummy but dry cupcakes and I didn't quite know what to do with them. Then I remembered seeing these cake pops the other day, so I thought I'd give them a try. I kind of made up my own recipe and I think they turned out super yummy. P.S. As kind of a side not, this might be a work in progress recipe. My first batch I only cooled for a little while, but my second batch of cake balls got frozen overnight, and they were kind of hard to work with. As I went to go dip them in the chocolate, if they were right out of the freezer the chocolate stuck to the outside of the cupcake balls, but as they sat out a little condensation started accumulating on the outside of the balls and made the chocolate not wanna really adhere unless I dried off the balls before dipping. Also, my second batch has little areas where a little bit of fluid leaked out of the chocolate coating. I think this was my bad from freezing, so I wouldn't recommend freezing these. But even with all of these little troubles, still try these. They are so yummy!! I just don't know what I did to mess up the second batch or if it was a little problem that other people would run into.
